Simple Cream of Mushroom Soup



It’s one of the most popular soups on the planet for a reason.


  • 4 tablespoons of butter;
  • 1 tablespoon of oil;
  • 2 onions, diced;
  • 4 cloves of garlic, minced;
  • 750 g of brown mushrooms, sliced;
  • a spring of thyme;
  • 100 ml of dry white wine;
  • 6 tablespoons of flour;
  • 1 liter of chicken broth (or vegetable broth to make the soup vegetarian);
  • 200 ml of cream;
  • salt;
  • pepper


  1. Heat butter and oil in a large pot over medium heat. Sauté onion and garlic until fragrant.
  2. Add mushrooms and the sprig of thyme. Cook for a few minutes.
  3. Pour in the wine and allow to cook for another few minutes.
  4. Add the flour, mix well, and cook for 2 minutes.
  5. Add the broth, mix again, and bring to a boil. Simmer for 15 minutes.
  6. Add salt and pepper. Stir occasionally and let the soup thicken.
  7. Add the cream and simmer for 5 more minutes.
