Salad Inspired by LGBT Flag Colors: Serve It To the Haters



Due to this year’s pandemic, we’ve been forced to skip one of the most colorful events in many places – pride parades. I am probably more upset about this than the quarantine itself. On the other hand, June (note: the recipe has been originally published in June) is the pride month, so we have plenty of ways to celebrate it in smaller gatherings. Of course, in an ideal world, we wouldn’t have such a thing at all, nor would we need to celebrate, remind, or fight for anything, but it is what it is.

As usual, I fight my battles in the kitchen. So, I’ve created a salad for this occasion. That’s good news for vegans and those on a constant diet – you will finally be able to test my recipes, too. Carnivores, chill – they will be perfect as a side to your BBQ meats. And if you have any hater friends, serve them a bowl, garnished with a laxative – karma will have less work to do.


  • 1 yellow tomato;
  • 1 red tomato;
  • 2 short cucumbers;
  • a little blue cabbage;
  • 1 small carrot;
  • 12 green bell pepper;
  • 12 yellow bell pepper;
  • 3 radishes;
  • 12 blue onion

For the dressing:

  • 12 lemon juice;
  • 2 tablespoons mayonnaise (I used remoulade);
  • 1 teaspoon mustard;
  • 1 tablespoon balsamic vinegar


  1. Chop the veggies in a way you like the most. I stuck with rather big pieces, and it worked just fine.
  2. Mix all ingredients of the dressing.
  3. Stir the dressing over the veggies and consume the salad within a few hours. Mine stayed put together quite well – I made them during lunchtime, and they were still pretty at dinner.
