Quarantine-Friendly Roasted Chicken

I didn’t have access to many spices and tried to work with what I have. The result was juicy and delicious, with a peppery and crunchy crust.

Ingredients:

  • whole chicken (half it for more even browning and less cooking time);
  • a few tablespoons of mayo or aioli;
  • allspice (or just black pepper);
  • salt;
  • a few cloves of garlic;
  • 1 onion

Steps:

  1. Cover your chicken in mayo or aioli. Sprinkle with salt and allspice.
  2. Make an onion and garlic “bed” for your chicken on the cooking tray.
  3. Now settle your chicken to sleep in the oven for some 90 minutes on medium heat.
