Perfect Belgian Fries

Fries are among those things that are super simple and common, yet so easy to fuck up. But with some extra time and effort, they can be the best thing ever. 

Ingredients:

  • potatoes;
  • oil for frying (or duck fat if you’re feeling fancy);
  • salt;
  • patience

Steps:

  1. Submerge potato strips in cold water; rinse potatoes in several cold water changes until the water in the bowl is clear. Drain potatoes and pat dry.
  2. Boil potatoes until almost tender. Freeze them for about an hour or more. 
  3. Fry potatoes in hot oil until just cooked through but still kinda white – this should take about 5 minutes. Work in batches. Transfer fries to a paper-towel-lined plate to drain. 
  4. Cool potatoes to room temperature – 30 minutes should do the trick.
  5. Frying round two. Fry the potatoes again until golden brown, 5 to 10 minutes. Transfer fries to a paper-towel-lined plate to drain. Season fries with salt.
