Mustard Soup Is a Thing, in Case You Didn’t Know



Apparently, mustard is not just the thing you put on hot dogs or mix with mayo to throw it on your morning hard-boiled eggs. The Dutch “Mosterdsoep” is a funky soup that can be served with or without bacon. I like to cook it with bacon to create a nice, smoky broth, and later, get rid of that bacon by feeding it to my dog.


  • a few cloves of garlic;
  • 2 onions;
  • 1 tablespoon of butter,
  • 1 liter of veggie broth (my favorite vegetable is chicken);
  • 200 ml of cream;
  • 250 g of cubed bacon;
  • 1 leek
  • 3 tablespoons of coarse grain mustard;
  • 1 tablespoon cornstarch;
  • salt;
  • pepper


  1. Peel and chop garlic cloves and onions.
  2. Fry bacon cubes in a pot until crispy – 5-10 minutes. I suggest saving some or all of the bacon bits for serving.
  3. Cook garlic and onions in the bacon grease left in the pot until fragrant. Add some butter if more fat is needed.
  4. Pour in the broth and the cream. Bring to a boil, then simmer.
  5. Slice the leek and add it to the soup.
  6. Add the mustard. Boil for a few minutes.
  7. Mix the cornstarch with a little bit of water in a small bowl and pour it into the soup to thicken it. Stir.
  8. Add salt and pepper.
