How To Fry the Perfect Crispy Egg

Tired of the standard sunny side side-up and over-easy (or over-medium, or even over-well – if you’re insane) fried eggs? The crispy egg technique is less common and works great in salads, sandwiches, burgers, fried rice, or with a steak. I had mine on breakfast toast with Ibérico de Bellota bacon.

Ingredients:

  • olive oil;
  • egg;
  • salt;
  • pepper

Steps:

  1. Heat a small pan until it’s smoking hot. Add olive oil – it should smoke, and that’s what you want.
  2. Add the egg (I like to put my egg in a small bowl before transferring it to the pan).
  3. Season with salt and pepper to taste.
  4. Cook the bottom of the egg to the point when it becomes potato chip-crispy. The yolk should remain runny.
