Changua – Colombian Breakfast Soup

No wonder this soup is so popular in many panaderias (bread stores) of Bogota – it’s a great way to use up all the stale bread! This soup is also known to cure hangovers; however, the idea of “hangover food” in general is a fad, in my opinion. Just sleep it off. No food will save your semi-drunk, nauseous ass.

Ingredients:

  • 1 liter milk;
  • 1 liter water;
  • 6 eggs;
  • a few bunches of fresh cilantro (stems and leaves);
  • 4 scallions, chopped;
  • salt;
  • pepper;
  • toasted bread

Steps:

  1. Bring the milk and the water to a boil. Add the scallions, salt, and pepper and cook for 3 minutes.
  2. Reduce the heat to medium and carefully add the eggs without breaking the yolks.
  3. Poach the eggs for 3 minutes.
  4. Add the cilantro.
  5. To serve, place chunks of toasted bread and an egg in six bowls, then ladle in the soup. Garnish with more fresh cilantro.
